Advent 16 - Away in a Manger (Elvis?) and Stilton Biscuits

Away in a Manger was first published in 1885 in Philadelphia and is a favourite carol in England.

Having read all about Stilton cheese yesterday, how about some  Stilton Biscuits?
They make wonderful nibbles and are quick and easy to make.

Ingredients:
6 oz (170 gm) plain flour
½  teaspoon salt
½ teaspoon cayenne pepper
3 oz (85 gm) Semolina (or ground rice if you don’t have semolina)
6 oz (170 gm) butter
5 oz (140 gm) crumbled Stilton
Heat your oven to 300F, 150C, gas 2 and lightly grease a baking sheet.
Mix together flour, semolina, cayenne and salt in a bowl.
Add 4 oz(113) gm of the cheese and butter and work together until you have a smooth dough.
Flour your work surface and rolling pin and roll out the dough to about ½ inch thick.
Cut into biscuits, (2 inch rounds) and arrange them on the baking sheet.
Sprinkle the remaining crumbled Stilton on the top of the biscuits and bake for about an hour until brown.
Leave them to cool on a wire rack and keep them (if you can) in an air-tight container.
